It all started with a simple offset smoker and an obsession with getting that perfect bark on a brisket. Weekends were spent experimenting with wood combinations, rub recipes, and timing.

Friends and family became the taste testers, and word spread quickly. What began as backyard cookouts turned into requests for birthday parties, then graduations, then weddings.
